Mick Hug, executive chef at the Millennium Hotel in Anchorage, shows one of his artistic dishes, blackened salmon, raspberry vinaigrette in basil oil. Just like the chef, Alaska's salmon producers are becoming more creative in their marketing and handling of the fish, making for gains in the resurging industry.
